Lake Tahoe: The Tallac Historic Site

Recently I had the opportunity to visit The Tallac Historic Site, which has been declared a national historic site, located in the beautiful city of South Lake Tahoe, CA, The site houses three estates: Baldwin (1921), Pope (1894). and the Valhalla (1923). These resorts, constructed from 1894 to 1923 were lavish resorts at the edge of the lake. Up to 250 guests could attend the estates at once, which included a casino and the biggest resort of the time.

During the late 1800's, the south shore of Lake Tahoe became a resting place for pioneers searching for gold. Upon completion of the transcontinental railroad, the site soon became a popular retreat for wealthy landowners from Virginia City and San Francisco.

The Pope Estate, built in 1894, is now open for guided tours and houses various art exhibits. Valhalla is a grand hall with beautiful wood floors, an open wood beam ceiling, a balcony of lodge pole construction and a twenty-foot high stone fireplace! It was built in 1923 and now stands as the site of many musical concerts, contains a cultural arts gift store, and even has suites available for rent. The entire Tallac Historical Site encompasses a full seventy-four acre tract of land and is listed on the National Register of Historical Places. It is located three miles north of South Lake Tahoe on Highway 89. The rustic and mainly logS built sites are nestled in the secluded woods along the beach of Lake Tahoe.

One of the highlights of my visit was the Anita Gibson Cabin. Anita was credited as one of the first women to invent and model the "slip" or "leotard" type undergarment. She was an avid designer, and also ran the resort when her father died. We actually saw a manikin dressed up as Anita, sitting in the corner of the cabin. She wore a beautiful white dress, which looked like one hundred percent cotton. It was soft, flowingly pretty, and very conservative.

Anita was always full of ideas and was actually one of the first women to run a resort (her father's business), and kayak across the Emerald Bay. She was once even challenged to a harder boat route around Emerald Bay, and not only kayaked faster than the existing time, but also ended up setting the record.

In all of the signs and materials that we read about Anita, she came up as an intelligent, energetic, creative, but very conservative woman. What is ironic though, is that she is the one responsible for the destruction and demolition of the larger Casino that her father had built. She stated that she did it for "environmental and economic" reasons, but one has to wonder, if she did it for religious or moral reasons. The Casino at the Baldwin Estate was the biggest of its time. Not too long after her father's death, Anita had it blown to the ground. Perhaps she may have felt guilty about the type of clientele the resort was attracting as well. The reason that I am reflecting upon this possible option does indeed go back to the signs and the manikin itself inside her old cabin.

She was a beautiful woman, with a firm jaw, and yet beautiful eyes. The monuments next to her all told of her inventiveness and conservative ways. She was known to pray and read the scriptures on the edge of the lake.

Further reflection really makes me wonder about this incredible woman named Anita Gibson, heir to the Baldwin Estate. She may have indeed made the best decision of all in blowing up her father's casino. Perhaps she felt it was a way to redeem herself and her father for allowing the sin of Gambling. History only knows. I will never forget my visit.

8. Take a hike through the Vindos Gorge. On a hot day, descent into the world's deepest canyon can be rough going, but you'll find yourself cooling off the farther down you go. When you get to the bottom, you will find plant species like no others on earth.

9. Sun yourself on the beaches of Crete and experience what other Europeans have known about for decades. The scenery is so beautiful, you can't help but relax; during the day, that is. Come night, get ready to party at the island's infamous clubs.

10. Experience the Rockwave Festival of music. For three days, you can have your choice of three stages: heavy metal, rock 'n roll, or good old fashioned dance music. A great balance to Greece's otherwise educational attractions.

Saigon - The City Spas

If you're on a flight from Ho Chi Minh City to Tokyo or Osaka, the plane is probably full. Observe your fellow passengers and you'll note that, along with the usual crowd of businessmen in suits, there are scores of Japanese women toting overstuffed carry-on bags. Thanks to Japanese press reports about Ho Chi Minh City's great shopping bargains, the city has become a hot destination for young Japanese women eager to shop, sightsee and relax.

Relax in Ho Chi Minh City? While the city may seem anything but peaceful, some local entrepreneurs saw an opportunity in the chaos. They reasoned that after a hard day of shopping and touring, visitors were in desperate need of rejuvenation. What was missing was a spa.

Women only

With its high ceilings, polished wood trim and glittering chandelier, the front room of the Saigon Spa resembles the lobby of a swank boutique hotel. Upon entering, guests are met by young women in Chinese-style cotton blouses and skirts, who usher them into an airy waiting room where they are served cups of scented herbal tea that is said to stimulate blood circulation. From there, customers can proceed to the herbal saunas, a Jacuzzi strewn with rose petals, or various screened massage rooms. The place smells divine.

"We use more than 10 kinds of fresh herbs in the Jacuzzi that we buy from the market," says Miyuki Wada, Saigon Spa's manager. "The Japanese boss went to s traditional sauna in Cambodia and was inspired to operate in this way."

Customers can choose to be massaged with ginger oil or lemongrass, have themselves slathered in Deal Sea mud, or coated in fresh papaya pulp. Many customers - 80 percent of whom are Japanese - opt for the works the Blissful Day package takes six hours, costs US$110, and involves a shower and herbal steam bath, a body scrub, a Dead Sea mud wrap, an aromatherapy massage, a dip in the b=herbal spa, a collagen facial treatment, a manicure and pedicure, foot reflexology, a paraffin hand treatment and a snack.

Catering only to women, this Japanese-Vietnamese joint venture opened in February 2002.

Secret Garden

Spa Tropic opened a month later, in March 2002. Run by Thuy Do, a Vietnamese-American woman, this spa is both smaller and more low-key than the Saigon Spa. Set in an old French villa down a small lane off busy Hai Ba Trung Street, it feels like a well-kept secret. "It's a nice surprise for people who do find it," says Ms. Thuy. International expats and Japanese tourists comprise most of the clientele.

With its white alls and simple furnishings, Spa Tropic has a spare, Zen-like vibe, complete with a tint Japanese-style garden. "I chose a villa to give it character and make it distinctly Vietnamese", says Ms. Thuy. "I wanted a fresh, contemporary and clean look."

Customers don loose clothes and lie on futons on the floor for their massages, choosing between deep-tissue Swedish massage and a more vigorous style of Thai - inspired Shiatsu. An hour-long massage costs US$22.

All of the aromatherapy and massage oils are imported, although Ms. Thuy plans to incorporate some traditional Vietnamese medicinal plants into her treatments. One new body scrub employs powdered rau ma - a herb typically steeped to make a cooling drink - mixed with soy milk to cool, soothe and exfoliate the skin. This scrub is followed by a light massage with lemongrass and kafir-lime oils.

Beauty Cures

The newest beauty spot in town is Qi Saigon, a large spa near the airport that uses products from the Label Qi, an offshoot of the Japanese cosmetics firm Shiseido. "It's the same company but more luxurious," explains manager Mai Thu Phuong. Ms. Phuong estimates that 70 percent of Qi's customers are Japanese.

With 100 staff and separate floors for men and women, Qi Saigon is the city's biggest spa. The ground floor features a hair salon while the top floor houses a bar. In contrast to the old-fashioned Asian vibe of its competitors, Qi is sleekly modern. Pale pink decor, curved walls, glass blocks, mirrors and polished chrome equipment give customers the sense that they're patients in an upscale medical clinic.

The emphasis here is on skin treatments. Along with massages, Qi offers facial treatments said to reduce the effects of aging, whiten the skin, and reduce acne. Hour-long facials cost US$33 to US$63.

While Japanese visitors and expats now account for most of these spa's customers, it's only a matter of time before this trend catches on among stressed-out Vietnamese urbanites. "High-income Vietnamese are exploring different options, but many still focus on beauty instead of health and relaxation", reports Ms. Thuy of Saigon Tropic. As the pressures of urban life continue to take their toll, it's not just tired tourists who'll be willing to splurge on spa treatments. After all, a few blissful hours of being pampered can feel like a mini vacation.

Packing for a cruise can be quite a daunting task - when else are you expected to show up in everything from a bathing suit to an evening gown, yet are allotted such little closet space? Some things to consider when packing your bags:

At the cruise terminal - or even at the airport if you have an air/sea or a land/sea package - your luggage is taken by the porters to be brought to your room. The cruise line will tell you that it is possible that you won't have your bags until after dinner (it is generally quicker, but there are no guarantees), so you want to be sure to have bathing suits, dinner clothes and your toiletries in your carry-on just in case.

Another thing you want to think about when packing is what type of luggage will work out best. Some cruise lines offer to store your empty bags during the duration of the cruise (call ahead to check), but if they don't, you may want to consider soft-sided luggage - storage in your cabin is at a premium! - and if there are several people sharing the same cabin, it would be even more helpful if your luggage nested inside each other.

Now that we've discussed your actual luggage - and how long it might be before you see it again – perhaps the last item to consider is what you are putting in the bags. There are many things to consider - formal and semi-formal dinners, sporting events, shore excursions, casual days - and because of the whole space issue, you want to be sure to choose wisely. Consider clothing in complementary colors, so that every item matches other things you have brought, think wrinkle-free and low maintenance as much as possible, and cut out excess as much as possible (large shampoo bottles, etc.). If you are traveling with other people - in your cabin or otherwise - see if there is anything that can be shared, such as irons, steamers, hair dryers and similar supplies. Remember, it was no less a person that Sherlock Holmes (even though he’s fictional!) who pointed out that if the walls don’t distend, then only the absolute necessities belong with you, and you need to keep them accessible!

While the Disney cruise ships themselves are a fabulous vacation destination, they are also a floating 'Fantasyland', traveling to beautiful and exotic ports of call. If you can manage to tear yourself away from the activities and amenities of the Disney cruise ships for a few hours, many wonderful adventures await you when the ship docks.

The Disney Wonder departs each Sunday from Port Canaveral for a 4 night cruise, and again each Thursday for a 3 night cruise. Both itineraries include stops at Nassau, Bahamas and Castaway Cay, Disney's own private island paradise. The 4 night cruise also includes either one day at sea, or an additional stop at Freeport, Bahamas.

The Disney Magic departs from Port Canaveral each Saturday for a 7 night cruise, and it alternates between cruising the eastern Caribbean and the western Caribbean. It is departing from Barcelona, Spain for 10 and 11 night cruises to beautiful cities on the Mediterranean, with stops in Italy, France, Spain and Sicily. Next summer, the Disney Magic will travel through the Panama Canal to spend the summer on the Mexican Riviera, with stops at Cabo San Lucas, Puerto Vallerta and Mazatlan.

Beware that the passport rules for American travelers have changed, and may or may not affect your travel plans. As of today, passports are required for all travel across borders by air - including Mexico, the Bahamas and the Caribbean, but not for travelers who arrive by cruise ship. They are planning to make passports required for cruise ship travelers soon - perhaps as early as January, so be sure to keep posted as to the rules. Even when passports are not required, having one certainly makes disembarking much quicker, and the wait for passports is extremely long due to the changing rules, so if you need a passport, be sure to apply sooner rather than later.

San Pedro: A City of Fun and Active Lifestyles

Spa in Thailand



Thailand is rapidly becoming the Spa capital of the world. In Conde Nast Travellers recent reader's survey Chiva Som in Hua Hin was in first place nudging last years winner Banyan Tree Spa in Phuket into second. Purely co-incidentally they were checking out the Lanna Spa the same weekend that we visited, and did photograph the suite I was staying as soon as I checked out. Could it be that next year we will have the top three spa rankings?
Spa culture gives an individual their quality time to make them feel good, a justifiable indulgence for the overworked. At the birth of Thailand's tourist industry American GI's came to Thailand during the Vietnam War looking for just two R's - rest & relaxation. The Spa tourist coming to Thailand today is looking for 4 R's Rest, Relaxation, Rejuvenation and Rejoicing life.

Five years ago few international travelers would of thought of Thailand as a Spa destination, so what are the factors causing the growth. Firstly the Kingdom grows the natural ingredients that not only make one f the world greatest cuisine's but that are also the natural ingredients for spa treatments. Secondly Thai's natural attitude to hospitality provides the pampering and feel good factor, a key spa ingredient. The total privacy is fueling a trend for couples to take their treatments together, sharing the experience. The philosophy of the spa is to promote general well being, a part of Thai lifestyle for generations. The herbs that are used in the treatment are bought in the local market, distilled and diffused. When mixed with steam is absorbed through respiration and the pores of the skin. The whole process is relaxed and unhurried.
I decided to try a Lanna facial, starting with deep herbal cleansing, exfoliation, massage for the face, neck, shoulders and hands. Then a revitalising mask was spread over my face using extracts of f Prai (the Ginger family), and Khanin (Cumin) to nourish, hydrate and balance the skin. It took an hour and the result did make me look and feel younger. Having had my face worked on it was now time for the massage. I opted for Orient Blend a pressure point massage based on the oriental theories of energy meridians. I was told this massage was effective in relieving tension, aches and pains. The combination of soothing aromatic oils and gentle kneading and stretching left my body feeling totally relaxed and refreshed. The lady giving me the massage professionally suggested that if I removed my underwear I would enjoy the massage more. So I slipped out of them and did enjoy the treatment but luckily it wasn't physically noticeable. Don't be shy when having a massage, being naked does make you feel better. When the treatment was completed I relaxed sipping hot ginger tea.

Back in the real world of Bangkok, I wanted to check out where I could spa without having to travel. The Oriental Spa is a short boat ride across the river from the hotel. I had found my sanctuary from the pressure and stress of Bangkok. Their temple of wellbeing is set in a gentile traditional teak house. I could very easily see why guests having found this collection of suites within a hotel would want to sleep over after their treatment. Given a duvet I would have happily done so, but alas its not possible. The Spa has its own Cuisine Minceur menu with dishes prepared in a separate section of the kitchen. The menu shows the calories and fat count for each dish so the guest can carefully monitor how they are fuelling their bodies. The privacy factor of each of the suites makes the experience more relaxed. The guest coming to stay at the Oriental just for Spa treatment accounts for 10% of the hotels total occupancy. The significant growth market is the number of male guests opting for spa treatment. Is it now real men do spa?

Vietnam travel: Meet & Greet in Vietnam

What you should do when meeting Vietnamese at the first time? These are some general notes which help you to be polite with Vietnamese culture and people.

Greeting People Most of the Vietnamese in urban areas no longer bow when they meet each other. In formal gatherings, at religious place, and sometimes in the country areas, one may see the people clasp their hands together in a prayer-like gesture and bow slightly. This is not practiced to any extent in everyday life in Vietnam as it is in neighboring Thailand.

The custom of handshaking, formerly considered barbaric to the Vietnamese, is now achieving popularity due to the Western influence in the country. Men will generally shake hands and say the equivalent of "how are you" and tip their hats when greeting people. Women, especially those in the countryside, still shy away from shaking hands, especially with men from their own country. It is best not to offer to shake hands with a woman unless she offers her hand first.

Introductions Whereas Americans often immediately introduce themselves in given situations, the ordinary people of Vietnam think this to be rather bold and like to have a mutual acquaintance make the introduction. They will rarely introduce themselves when going into a home or office until asked to do so. This may be due to their innate shyness and modesty.


Names carry great importance in Vietnam. Often Vietnamese will have secret names, known only to themselves and their parents. If it is given away, the person believes he is exposed to evil spirits. Except in rare cases, family names are seldom used outside of the family circle. Children are often called names in rank of birth, such as Chi-hai, Chi-ba (daughter two, daughter three).

One should call Vietnamese people by Mr., Mrs., or Miss until asked to go on a first name basis. They do not do this as quickly as Americans in their relationships with people. Especially important, when in the company of a third person, your friend must be called by his name with a Mr., Miss, or Mrs. proceeding it, as the case may be. If this is not done, it may suggest great intimacy or friendliness, or can also be interpreted as being arrogant treatment of the individual by a superior.

Most Vietnamese names consist of a family name, middle name and a personal or given name. The order is reverse to the American custom. For instance, John Paul Jones' name in Vietnamese style would be Jones Paul John. However, we do not call someone by his family name in Vietnam. If we use the names for instance, Miss Hau Dinh Cam. Hau is the family name. We would call her Miss Cam. Jones Paul John would be Mr. John. On very informal occasions, we might at their request call them Cam or John, but would always add a Miss or Mr. to the name in the presence of other people outside of the group.

An exception to this rule dates back to traditional customs of long ago when beloved leaders were called by their family names.

It is desirable to call Vietnamese professional and government officials by their title, i.e., Mr. Assemblyman, Mr. Doctor, Mr. Lieutenant, etc.

Taboos in Personal Relationships It is best to call to people in a quiet voice, using their names preceded by Mr. Mrs., or Miss. Waving or beckoning with an upturned finger is considered highly impolite. If you must silently signal for someone to come toward you, do so by using the whole hand with the palm turned down. Not to do so would indicate an air of authority or superiority over the person being called or beckoned.

Never touch anyone on the head as this would be considered as a personal insult to the individual and perhaps even to his ancestors. Many Vietnamese believe the spirit resides there. Hence, the belief is that if a person is beheaded, his spirit will roam forever without finding a resting place. Also, don't touch anyone on the shoulder. Some people believe that a genie resides there and it is undesirable to disturb him. If you mistakenly touch one shoulder, you must also touch the other shoulder and this helps offset the bad luck.

Confusing Personal Traits of Vietnamese Vietnamese people have a habit of not looking into your eyes when they talk to you. This is often because of shyness, but one of the main reasons is that traditionally they do not look into the eyes of those they respect or those higher in rank when talking to them. This is to indicate politeness.

The smile of a Vietnamese can be very confusing in Vietnam to an outsider and cause misunderstandings. In some Oriental countries, a smile can mean sorrow, worry, or embarrassment. In Vietnam, it may indicate a polite, but perhaps skeptical reaction to something, compliance or toleration of a blunder or misunderstanding, or on occasion represents submission to judgment that may be wrong or unfair. This is particularly true if the one making the judgment is at a superior level and perhaps has lost his temper. For instance, a laundress may ruin a favorite shirt and is called in by her employer to be asked about it. She may smile. This does not mean that she thinks it is funny that she burned the shirt, but instead is submission to the fact. If the owner of the shirt loses his temper, she may keep smiling indicating politeness or patience with superiors.

Because of this, foreigners should be very cautious in voicing their opinions and perhaps be a little more delicate, more tolerant and restrain from being obstinate.

Loud arguments or heated discussions are frowned upon and are seldom heard among the Vietnamese. Well-bred people are trained in self-discipline. It is best, therefore, for Americans or other foreigners to do their best to keep tempers in check, no matter what the circumstances, lest they be looked upon with disdain.

Vietnamese seldom use a direct approach in their dealings. To do so indicates a lack of tact or delicacy. Directness is appreciated in the Western world, but not in Vietnam. The Vietnamese do not like to say "no" and will often reply "yes" when the answer should be negative. This problem is further complicated by Americans posing negative questions such as, "It doesn't look like it will rain today, does it?" The correct answer is often the one given by the Vietnamese--"Yes." We expect to hear "No." Think it out and you will see that the Vietnamese is really correct.

Best advice, don't ask negative questions.

Hospitality The Vietnamese love to be hospitable and will often invite you to dinner. If gifts are taken for the family, they should be items that they could not easily obtain themselves. To take something that they could buy easily would be a bad reflection on their economic means. They love anything from western countries, and it does not have to be expensive. If you give the children things, each should have a separate gift. It is not polite to take a whole bag of candy and give it to them as a group.

On short visits, drink the tea that is offered, even if you don't like it and are afraid of the local water. It shows that you are welcome and well respected.

Rank is always carefully observed by the Vietnamese in their homes and elsewhere. Servants never sit at the same table with their employers if outsiders are present, and only in rare cases otherwise.

On some occasions at an informal meal, the whole family except for the person inviting you to dinner, may get up from the table and eat elsewhere. This is not a show of disrespect for you but is simply a way of letting the guest spend time with his special friend.

At banquets, one should arrive on time and greet elderly persons first. If the dinner is served Chinese style, food should be transferred from the main bowl to your individual bowl before eating. It is impolite to eat anything with your chopsticks directly from the serving bowl. A guest may refrain from taking something he doesn't like, but if the hostess serves it to you unknowingly, force it down if at all possible. If the guest refuses, the host may doubt his sincerity and coax him even more. Individual bowls are usually changed with each course and are generally removed only when empty, except the last course. Here, a little something should be left to indicate to the host that there was enough food and everyone is satisfied.

The Island, Where, Width and Population

Bali is one of the 17,000 Islands of Indonesia, located between 8 and 9 degree south of the Equator. It takes 3 hours flight from Singapore or 5 hours from Sydney or 4 hours from Hong Kong and 8 hours from Tokyo, those closest cities in the pacific. There are direct and some connects flights from Europe, North and South America as well as Africa. A very narrow strait, called the strait of Bali, joins the Indian (Indonesia) ocean and the Java sea, separating Bali from Java. Bali’s total area is slightly more than 2000 square miles. According to the latest census Bali’s population is three million five hundred thousand people.

Topography, rice fields, mountains and beaches

The mountain range is from Batukaru in the west and Gunung Agung in the East while in the center there are lakes which divides Bali into two plains, the Northern and the Southern plains. The Northern plain is much narrower, hilly and dry so that there is no much wet rice culture possible and yet the people here like in the rest of Bali live from agriculture. The mountain in some places comes right to the sea, the coast is swampy in the West, alternately sandy and full of pebbles in the center and rocky in the East. There are few beaches here good for swimming as well as snorkeling and diving.
The Gunung Batur is very active volcano. In this century it erupted in 1905, 1926 and 1963 when it kept erupting till 1974. One of its many craters once in a while emits smoke. The highest Volcano - Mt. Agung was quite for more that 150 years, but it was certainly not dead yet. It erupted suddenly in 18 February 1965 when Bali was about to have a big purification ceremony, called Eka Desa Rudra, which is to be held every 100 years. The previous eruption must be 1811, because this was mentioned in the book, the history of Java, written by Raffles, when he was Governor General of Indonesia.

The center part of Bali are most fertile and in these regions the tourists can see the most beautiful rice field terraces. This part of Bali is, no wonder, called the rice belt of the Island. The South part lies white sandy beaches where mostly hotels are located such as : Nusa Dua, Jimbaran, Kuta, Legian and Sanur area.
To the South-East of central Bali lies the arid island of Nusa Penida, Nusa Lembongan which used for snorkeling, beaching by most of Cruises company.

Flora and Fauna
Bali is though to be the last island of Wallace line that separates the flora and fauna of Mainland Asia and Australia, but in Bali there are no kakatoe birds, but one finds plenty of them in the islands East of Bali, e.g. in Sumba and Flores. A very few are found in Nusa Penida. There are more snakes and beautiful myna colored birds. The Australian flora and fauna are supposed to begin in Lombok, the island just East of Bali. In Nusa Penida one occasionally sees the white kakatoe and the Horned bill; a bird with very large beak, too big in proportion with the head, and the body.

Religion

Most population of Bali (90%) are Hindu and the others are Catholic, Protestant, Moslem and Buddhist. The Hinduism in Bali mixed with local tradition and culture, thus almost everyday you can find ceremony or festival.
The Balinese will be accompanied by rituals from birth to death. The birth is celebrated through the "penyambutan" ceremony, The three Month ceremony when the child is allowed to touch the ground an given the name. Every six month celebrate otonan (birth day), after the adulation they have 'tooth filling' ceremony then wedding ceremony.
As we are Hindu we have also Cremation ceremony, if some one died we will cremate the death body. Common people said that through cremation the soul can go the Heaven.
Temples, houses and other building are celebrated every 210 days (6 month) as the anniversary ceremony. You can easily find ceremony almost everyday. This is one of the main reason why travelers come to bali.

Hanoi Snack Time

The refined cuisine of Trang an, as Hanoi was once known, has made its mark throughout Vietnam. Using ingredients from the rice paddies, generations of Hanoi women have created a unique culinary legacy. Made of rice and water, Bun (rice vermicelli) is symbolic of the paddy fields. In Hanoi, these simple noodles are enjoyed year-round. Vermicelli, like steamed sticky rice and other cakes, is generally considered a snack, to be eaten morning, noon or night. Rather than encouraging you to: help yourself to the vermicelli", Hanoians say: ?You are invited to try a morsel".

Dishes of vermicelli are sold by itinerant vendors, at sidewalk stalls and in restaurants. Street vendors peddle the most popular type, Bun Rieu (sour crab vermicelli soup). This tasty dish mixes the cool taste of tomatoes, delicious freshwater crab, sour vinegar, fresh vegetables and rich crab roe fried with onions.

Bun Oc (snail vermicelli soup) is a popular morning snack. Originally from Khuong Thuong village, this dish is getting harder to find in Hanoi's Old Quarter, as cooks and vendors are abandoning their traditional jobs. The snails hail from Hoa Binh province, where they live on moss-covered rocks. Steamed in wine vinegar, the white snails have a crunchy texture. Their delicate fragrance is highlighted by the flavors of ginger and chili. The vermicelli is as soft as rose petals.

Another delicate dish is Bun Moc (minced meat vermicelli soup). Bobbing in the broth are pieces of white chicken, brown mushrooms, pink pork pie and spicy green vegetables. The sweet smell of mushrooms accompanies the whole meal, lingering even after the bowl is finished.

Hanoians are also fond of Bun Ca ro Rau cai (anabas fish and colza vermicelli soup), especially in early autumn. Fish broth is poured over vermicelli, white fish, green colza and fennel to dispel the heat of a sunny morning.

A favorite lunchtime dish is Bun Cha (vermicelli with grilled meat). This dish is hard to forget. Those in the know head to the corner of Thi Sach and Tran Xuan Soan streets, where some women sell Bun Cha Tu Ky from about 7 AM to 11 AM.

Once eaten only by poor people, Bun Dau (vermicelli with tofu), is a tasty and healthy dish. The ingredients are simple. Phu Do coiled vermicelli and golden fried Mo tofu from Co Mai village are dipped in reddish shrimp paste mixed with the grease used to fry the tofu. Fresh perilla, basil and marjoram make the dish complete.

Hanoians are also fond of Bun Ca ro Rau cai (anabas fish and colza vermicelli soup), especially in early autumn. Fish broth is poured over vermicelli, white fish, green colza and fennel to dispel the heat of a sunny morning.

Costa Rica's hidden treasure-- Quebrada Honda

Quebrada Honda is a magical, mysterious place on the Nicoya Peninsula, not far from the Amistad Bridge. I had the pleasure of walking through the woods there with the owner of a large piece of land adjoining the Barra Honda national park. He was the proverbial walking encyclopedia with more information than I could process (especially since he was speaking only Spanish). He knew every living thing in the forest like his own children and spoke lovingly about the perfectly camouflaged animals watching us. That was a bit chilling as I immediately imagined unblinking, curious eyes nearly everywhere in the bushes and wondered when they'd had their last meal. Caves on his property connected to those in the national park, but we didn't tour them due to time constraints (thank goodness - friends who have toured caves have regaled me with tales of water snakes popping about, bat colonies flapping madly at the intrusion and very tight places - no thank you). Springs with high-calcium content cascaded over rocks, wearing them away and making comfortable seating in the midst of the flow. (These rock formations were used as models for the facade of the San Pedro Mall.) The water wasn't cold and I could picture myself sitting on them reading a book surrounded by a spectacular array of leaves, branches and calling birds - totally removed from jets roaring overhead, dogs barking and diesel fumes. Also on the grounds were the remains of an indigenous settlement, evidenced by bits of pottery and teeth constantly working their way to the surface of the ground. I tread softly and respectfully in this area as I felt I was on sacred ground. Before leaving my new friend, we passed by the Chorotaga oven he still used for cooking. As a parting gift, he gave me a bird's nest that is rumored to bring good luck. It was long and narrow, almost like a sack. I wish I knew what kind of bird flew in and out as it fed its hatchlings. Hopefully, as more natural habitation is gobbled up by developments and hotels, people will be demand that the land, forest, water and peace be protected in deed as well as word. Once a forest is turned to concrete, it is gone forever. Then where are the animals?
